Decaffeinated Coffee

Decaffeination is a process where a chemical is introduced into the coffee beans called dichloromethane also known as methylene chloride—a safe solvent that comes off during the process while the remaining residue is burned off during the roasting process.  Most of the coffee roasters favour this type of method because the taste is much better.  Another method is the Swiss Water method—also considered very safe, the process uses water and charcoal in extracting caffeine.  And because more water is used, much of the flavour is affected.  And of the mentioned processes roasters still prefer the chemical process.
